One doesn’t have to be a vegetable lover to appreciate these cakes which are actually salads in disguise.
The new trend, started by culinary artist Mitsuki Moriyasu, is the latest thing to draw admiration in Japan, and it’s enticing people to eat more vegetables.
DogoNews reports that the intriguing idea was conjured by Moriyasu when she was inspired to make greens more palatable to those who do not enjoy them. She began by selling the Vegedeco cakes at the Bistro La Porte Marseille restaurant in Nagoya, Japan, in 2015. The response was astounding!
Because the cakes were an instant hit, she decided to open an entire cafe dedicated to healthy eating.
Each colorful cake is actually a salad in disguise. Instead of serving the vegetables in a bowl, the artist hides them within the layers of the ‘sponge cake’ that is made from soybeans. And the frosting is a mixture of cream cheese and tofu with vegetables blended in to provide the vibrant colors.
At the Vegedeco Salad cafe, customers can select from a variety of options depending on their vegetable preference. A fermented dressing made with koji (Japanese sake starter) accompanies every slice, and each piece costs about 735 yen ($7 USD). 100 yen will earn a patron a slice of gluten-free bread made from an ancient strain of rice, and a hot cup of tea colored with vegetable powder.
If this trend takes off in other areas of the world, picky eaters will no longer need to dread wilted lettuce and soggy tomatoes on their dinner plate. They can just dig into a colorful vegetable cake!
